Fun with Joey...

Lila's Baby Shower & 34 Week Sonogram Pics...

Our amazing friends and church family showered Lila and I with gifts on Sunday! The occasion was beautiful and our baby girl received so many fabulous things. Thank you, THANK YOU to everyone who has so very generously and thoughtfully helped us prepare for Lila's upcoming arrival! We are officially stocked with baby essentials and she will be dressed to impress! ;)

For those of you requesting a belly shot...here you go. Lila and I at 34 weeks.

Our sonographer was able to capture a couple of great 3D photos of Lila this morning, despite her cramped quarters. She weighs 4 lbs 14 oz (19%) and is doing well! Her induction date has now been moved up to November 23rd...less than a month to go!!!


Now that she has filled out a bit more, she looks more like her big brother...

Busy Momma Recipe: Chicken Saltimbocca

One of Travis and my favorite meals is the Chicken Saltimbocca at Maggiano's. And all though, I will admit that this recipe isn't an exact replica, it's pretty darn good (& quick) for a home cooked version.

Chicken Saltimbocca

3-4 boneless, skinless chicken breasts
4 thin slices prosciutto or deli ham, halved
8 fresh sage leaves
1/2 tsp. salt
1/4 tsp. pepper
2 Tbsp. olive oil
1/2 c. white wine
1/4 c. sour cream
1/2 tsp. sugar
1 tsp. minced fresh sage

Cut slit lengthwise through the thickest part of each chicken breast (It's easiest to cut the chicken breast when it's slightly frozen); fill with prosciutto and 2 sage leaves. Sprinkle with salt & pepper.

In large skillet over medium heat, brown chicken in oil for 1-2 minutes on each side. Reduce heat to low; cover & cook for 8-10 minutes or until juices run clear. Remove & keep warm.

Add wine to the pan. Bring to a boil. Reduce heat; simmer, uncovered, for 2-3 minutes or until slightly reduced. Stir in sour cream, sugar & minced sage; heat through (do not boil). Serve with chicken.

I served with brown rice and oven-roasted asparagus...yum!

Walkin' in High Cotton...

Cy and I spent some time this weekend with Gramps and Mimi; enjoying the Fall weather, Mimi's gorgeous flowers & of course, the abundance of Gramps' high cotton. Lots of happy farmers this harvest season...thank you, Lord!
