These two jewels are by far the most requested recipes in my possession...& my husband's favorites!
The Mac-N-Cheese recipe is courtesy of Travis' grandmother. Kids love it, adults love it- it's absolutely delicious!!! The recipe itself is really easy, but there are a few tricks that will help you get the tastiest result.
Gramsy's Mac-N-Cheese
~Cook 1 pkg. Large Elbow Macaroni using pkg. directions.
~In 2 c. measuring cup, combine:
5 eggs
1/2 tsp. salt
Fill to TOP of measuring cup (past 2 c. marker) with milk
~Layer 3 times:
1) Macaroni
2) Several (4-5) "dobs" butter (be generous)
3) Shredded Kraft Deluxe American Cheese (in blue box next to Velveeta)
~Pour egg mixture slowly over layers. Make sure that liquid gets to the bottom. (I use a butter knife or end of a spoon & poke holes into the layers to assure that the liquid has gotten all the way to the bottom & throughout the layers.)
(**Note: It helps to put cheese in the freezer for a few minutes prior to shredding. Also you may need to use more macaroni or more egg mixture depending on the size of the container used. Just make sure that you use enough egg mixture that the liquid gets all the way to the bottom and throughout the layers.)
~Bake @ 350 degrees for 30 minutes. May need to bake a bit longer if using a large dutch oven...usually takes mine about 40 min.
Chocolate Coffee Cake
1 stick butter
1/2 c. oil
1 c. brewed coffee
4 Tbsp. cocoa
2 c. flour
2 c. sugar
1 tsp. soda
1 tsp. salt
1/2 c. buttermilk (can sub: 1 Tbsp. lemon juice, fill to 1 c. w/ milk)
2 eggs
1 tsp. vanilla
~Bring butter, oil & coffee to a boil & cook 1 min. Set aside. Mix dry ingredients. Add eggs, milk & vanilla. Add boiled mixture SLOWLY- will be soupy, thin batter. Pour into greased & floured 9x13" pan. Bake @ 375 degrees for 35 min.
~Icing:
1 stick butter
4 Tbsp. cocoa
1 tsp. vanilla
6 Tbsp. milk
1 (16 oz) box powdered sugar
~Heat butter, milk & cocoa. Pour into bowl w/ powdered sugar & vanilla. Mix to good consistency & pour over hot cake.
